Hodgson Mill Cookies - Five Star Review
The Gluten Free Hodgson Mill Cookie Mix is fantastic! The instructions are easy to follow, the number of ingredients needed is minimal and the cookie flavor is fantastic! Better yet, you have the option to make various flavors.
CLASSIC GLUTEN FREE CHEESECAKE
What you will need
9 inch nonstick springform pan
Parchment paper. TIP: Always use parchment paper! Bakes more evenly, never sticks and cleanup is a breeze – no greasing the pans!
CRUST
1 box gluten free S’moreables graham style crackers. You can find this at Wholefoods
3 Tbsp white sugar
1/3 cup of melted butter (20 seconds in microwave at half power)
FILLING
4 eggs
1 tsp vanilla extract
1 cup white sugar
4-8oz (or 2 lbs) of Philadelphia 1/3 less fat cream cheese
TOPPING
Pre-made lite cherry topping
1 tsp vanilla extract - Optional
Place the base of the springform pan on top of parchment paper. With a pen closely trace the outer part of the pan. With scissors cut the traced area. Place it inside the pan’s base.
Preheat the oven at 300 degrees F.
CRUST
Grind 1 box gluten free S’moreables graham style crackers. Make sure there are no cracker chunks. This will give you 1 ½ cups of ground mix.
In a bowl, mix the ground S’morables, 3 Tbsp white sugar, 1/3 cup of melted butter. Transfer the mix into the pan. Evenly press the mix into the bottom of pan.
FILLING
In a mixer, beat the cream cheese, 1 tsp vanilla extract and 1 cup of sugar until you see a creamy consistency. Then at slow speed add the 4 eggs, one at a time. Pour in the mix into the pan.
Place the pan in the oven between 60 and 65 min or until the center of the cake is set.
Let the pan cool for one hour or until it reaches room temperature. Run a plastic knife on the inner side of the pan’s rim. Do NOT remove the rim until this takes place. Refrigerate the cake for at least 4 hours. Tip: Don’t worry if about cracks or other slight imperfections – the topping makes it beautiful and it tastes just great!
TOPPING
Pour the pre-made lite cherry topping in a bowl. Optional - Add 1 tsp of vanilla extract. Slowly mix well. Pour the mix on top of the cheesecake.
